Le travail entrepris dans cette thèse a pour objectifs essentiels de mettre en évidence certaines formes d’interaction (GEI ou interaction génotype environnement) entre facteurs et la traduction de leurs effets sur des variables ou caractéristiques observées dans les populations animales et végétales. La réduction de la dimensionnalité de l’espace des observations pour une identification correcte et une interprétation rationnelle de ces formes, fait appel aux outils statistiques les plus récents qui utilisent la notion de minimisation structurée du risque (Structured Minimisation Risk). Ces objectifs sont atteints grâce à une panoplie de modèles construits selon la nature des variables (quantitatives, qualitatives, mixtes) et la relation de structure à expliquer et interpréter. Les approches entreprises sont divisées en deux groupes: - Les méthodes analytiques par les modèles linéaires et non linéaires multiples avec sélection de variables selon divers critères et la validation de la dimension de l’espace des observations. - Les méthodes graphiques basées sur les techniques de cartographie linéaires et non linéaires qui ont la propriété de préserver la topologie, la cohérence, la dimensionnalité et la corrélation entre objets à reconnaître ou à classer. Notre étude apporte des contributions théoriques et algorithmiques pour traiter le problème des préférences révélées dans la théorie du consommateur. On s'intéresse essentiellement à la reconstruction d'une fonction d'utilité à partir d'un nombre fini d'observations sur les choix effectués par le consommateur. Nous montrons qu'il s'agit d'un problème d'intégration dans le contexte le plus général de la convexité généralisée. Nous développons alors une approche originale faisant appel aux investigations récentes liées à l'analyse convexe généralisée et la monotonie généralisée. L'optimisation linéaire et non linéaire sont également fondamentales pour établir certains résultats.
