Nous sommes tous pointilleux sur la qualité de ce que nous avons dans nos assiettes. Nous sommes tous méfiants des «interventions humaines» qui ont pu venir altérer les «bons produits» d'origine. Cependant, observant les pratiques nouvelles, qualifiées d'industrielles, dans l'agriculture, le conditionnement, la distribution, nous savons bien qu'elles sont le résultat de nos genres de vie urbanisés, de l'accroissement des populations, de nos goûts de consommation. Ces fameuses «pratiques industrielles», quand tout est dit, sont surtout à base de chimie : phytosanitaires pour l'agriculture, additifs alimentaires en tout genre pour la conservation, pour le goût, pour la qualité sanitaire... Nous voilà au coeur de l'ambiguïté : méfiants de la chimie mais vivant de la chimie, mais demandeurs «objectifs», souvent même inconsciemment, de chimie. Ce livre met de l'ordre dans ces idées contradictoires. On y voit les contraintes que s'impose l'industrie agroalimentaire (ou qui lui sont imposées) : priorité absolue à l'innocuité des produits, mais aussi satisfaction du consommateur. On voit le soin de la démarche industrielle qui veut gagner sur tous les plans : séduction de l'aspect, perfection sanitaire, qualité du goût, qualité sensorielle par les textures, sophistication des préparations, conservation... et les progrès que la recherche scientifique lui permet de faire dans la poursuite de ces objectifs. De grands spécialistes du domaine, responsables de l'INRA, de l'Afssa (Agence française pour la sécurité sanitaires des aliments), chercheurs et responsables de l'industrie viennent nous dire pour les uns comment cerner les demandes profondes de nos concitoyens en matière d'alimentation (par la description des processus biologiques mais aussi, en éthologue, en ayant recours à l'étude du comportement de nos lointains parents, les grands singes), pour d'autres comment faire rentrer dans la pratique toutes les exigences de la démarche réglementaire, pour d'autres encore traitant de cas concrets : vous saurez tout sur les bienfaits du chocolat, sur la nature des additifs alimentaires des sauces et préparations, le contrôle et la préservation des couleurs. Avant tout, vous aurez compris que la recherche scientifique la plus avancée (chimie analytique, chimie-physique) est amplement sollicitée dans ce domaine et avec succès : nos assiettes n'en attendaient pas moins !
