This work aims to study the antimicrobial activity of the crude extracts of two aromatic plants, Thymus vulgaris L. and Rosemarinus officinalis L., and an experiment on the manufacture of fresh cheese with the incorporation of the extract of these two plants and the study of its effect on the shelf life of the product. Plants were collected from the region of Sétif. The powder of plants was subjected to methanol solvent extraction which was used to determine the antimicrobial activity. The activity microbial was slightly positive on some strains of bacteria for rosemary methanolic extract, the results of the extract of Thymus vulgaris as a high antibacterial activity represented with inhibition diameter of 27mm on Staphylococcus aureus in concentration 50mg/ml. The effect of the methanolic extracts has been evaluated by the following: the evolution of the physic-ochemical and microbiological parameters during 18 days .of storage at 4°C, a change in odor, and the appearance of mold was noted on the control cheese and the rose-enriched cheese which was not the case for the enriched cheese.
