Our studywas focused on two plant species: beetroot, scientifically named "Beta vulgaris L.," and carob, also known as "Ceratonia siliqua." The phenolic content, protein levels, the antioxidant properties, and antibacterial effects of the aqueous extract obtained were investigated. Aqueous extract was obtained by decoction process, which resulted in a yield of 10%. The Folin-Ciocalteu method was employed to determine the total polyphenol content in the aqueous extract through a colorimetric assay, the results indicated a content of 224.8 ±31.88 μg EAG/mg E. The analysis of flavonoids through the aluminum trichloride method in the aqueous extract demonstrated a result of 1.84± 0.90μg EQ/mg E. Antioxidant properties were assessed through the DPPH method to measure free radical scavenging activity, total antioxidant capacity (TAC), and iron-reducing ability (FRAP).The extract exhibited potent antioxidant properties, with an IC50 value of 11.90 μg/ml. Additionally, it demonstrated a TAC of 55% and an FRAP EC50 value of 249.859 μg/ml. The protein level was measured using the Bradford method, and the findings indicated that the value of the protein content was determined as 11.90 ± 0.143gper 100 g dry weight. The aqueous extract exhibited an inhibitory effect against Pseudomonas bacteria, with a diameter ranging from 2.4±0.08 mm However, no antibacterial activity inhibition towards E.coli, Bacillus subtilis, and Staphylococcus aureus bacteria was observed. The research demonstrates that beet and carob extract serve as natural antioxidants and antimicrobials, offering a chemical-free solution to address the health requirements of athletes. |
